I find that bosses are made interesting only by the build-up. If the player does no work to make it to the boss, it just doesn't seem like a boss any more. It's not as dramatic, suspenseful, or epic.
Nice list though.

Not sure if anyone has said this, but Power Battles and its sequel comes with Megaman Anniversary collection which you can get relatively cheap now.

My game, Pico of the Dark Ages. Only because every one whined their ass off that the bosses were to hard, you only fight 1 type of enemy to get to them, and the final level had the player refight all the other bosses.

That game definitely has some memorable bosses, but I wouldn't classify it as a purely boss-driven game.
